Pancreatitis (inflammation of the pancreas) is a disease characterized by severe pain syndrome, which brings the patient severe suffering. Pancreatitis is a disease that always comes suddenly: the first attack occurs the moment the pancreas begins to attack its own enzymes. Acute manifestations of the disease are eliminated fairly quickly, but there is always the risk of a later slow course of the disease and the diagnosis of chronic pancreatitis.

The main thing in treating pancreatitis is diet.

The most basic condition in treating a disease such as pancreatitis is a mandatory diet. The first time after an acute attack (2-3 days), it is recommended to refuse food completely and starve. It should be noted here that the body usually "knows" itself that it needs to wait with food, and therefore, a patient with acute pancreatitis rarely has an appetite.

Hunger for a few days is simply necessary for the affected pancreas, first of all, so that it is at rest - during eating, it releases enzymes in this organ that are necessary for the digestion of food that has entered the stomach, butthese same enzymes behave aggressively causing inflammation and pain. This situation is comparable, for example, to a broken foot: for the bone and tissue of the injured foot to heal, complete rest is ensured with the help of plaster, while it is forbidden to step on it. The only thing allowed is the use of non-carbonated warm alkaline mineral water.

The state of complete rest of the pancreas in recovery and at least relative in the chronic form is a prerequisite for the onset of sustained remission. Therefore, a diet for pancreatitis is not only an effective therapeutic method, but also the main rule for preventing exacerbations of the disease, and, as a result, inhibiting its further development.

The essence of the diet is the rejection of all foods that increase the formation of acid in the stomach and provoke the active work of pancreatic enzymes. After an exacerbation of the disease, doctors strongly recommend that you follow a diet for a long time - at least 8 months. But that does not mean that after "trying" these months with a fairly strict diet, in the ninth it should break down and fully compensate for the missed opportunities.

A diet for chronic pancreatitis is a certain food culture that enters the patient's life for a long time. Of course, sometimes it is very difficult to give up many forbidden foods and favorite dishes, but the memories of great abdominal pain help to eat well and not succumb to temptations. After all, even a small portion of a harmful product can lead to an acute attack, which will have to be removed in a hospital.

A patient with pancreatitis should eat meals prepared according to the principle of "mechanical saving" of the digestive organs: it is preferable that the food is cooked on steam or, in extreme cases, boiled, used in puree or chopped form. Redness, grilling, smoking, grinding are not allowed. Fats that have undergone heat treatment will also damage the pancreas, so any oils - both butter and vegetables - should be added cold to ready-made dishes.

You can eat:

  • vegetables (boiled, steamed or boiled);
  • from soups: only vegetables (do not use onions, garlic and white cabbage) or dairy cereals, with a chronic form and without deterioration, soups with secondary meat broth are allowed;
  • lean meat, poultry or fish (boiled or steamed);

  • rye bread, fresh biscuits, cakes, pastries, caramel, solid cakes, chocolates and chocolates;
  • from beverages: coffee, strong tea, cocoa, carbonated drinks, kvass;

Steamed meat pudding

You will need:

  • 120 g beef;
  • 20 g butter;
  • 10 g oatmeal;
  • 1/3 cup water

Boil the meat, previously cleaned of tendons and fat, grate it a few times, and then combine it with gauze, add the beaten egg whites and raw egg yolk to the resulting mixture. After that, you need to carefully cook the "dough", place it on a greased plate, smooth the top and steam the resulting pudding until cooked through.

Snowballs with fruit juice

You will need:

  • half egg white;
  • 25 g sugar;
  • 50 g strawberries;
  • 10 g potato flour;
  • 100 g of water;
  • a pinch of vanilla.

The protein should be beaten until it becomes a thick foam and gradually, without stopping the whipping, add the vanilla and 15 g of sugar to it. Then spoon the beaten protein into a deep dish of boiling water.   • fennel or parsley.

Dice potatoes and squash. Chop the carrots and onions. Put all the vegetables in a saucepan: the first layer is the onions, then the other - the potatoes, squash and carrots. Salt a little, add water to about half the volume and cook over low heat. Then, at the end, add vegetable oil, herbs, bring to a boil, turn off and let stand for a while.
